Grated Carrots Temp Checks

I have a 2kg bag of grated carrots, What would be used to check the products temperature? A Probe instrument or a infra red scanner ?

Neither. The grated carrots have too many air pockets for either tool to provide you with an accurate reading. Your best method would be to control the temperature of the environment surrounding the carrots. Over time, the temperature of the carrots becomes equal to the ambient temperature of the surrounding air.
