GTX 1060 3GB and GTX 1060 6GB

What´s the difference of those two?

One has 6GB of RAM and the other has 3GB. The 3GB version also has 10% fewer texture units and CUDA cores, but the same number of ROPs and frequency. As long as RAM is not the limiting factor, the 3GB version performs about 95% of the 6GB.

Generally the more RAM in a graphics card the better. RAM on the graphics cards is generally used to store textures and allow improved anti-aliasing, post-processing etc.

Invariably you'll get similar performance from each card regardless, the 3GB will do the job and cost a little less than the 6GB version. You can check the differences at http://www.videocardbenchmark.net/high_end_gpus.html

More RAM is only useful if you run out of RAM, otherwise it has no effect on performance. The 3GB card is adequate for the vast majority of games today, but over time the size of textures in new games will grow, possibly causing the 3GB card to need to run lower settings than the 6GB card because the assets won't fit in RAM.
