I currently have a GTX 1070(ZOTAC GeForce GTX 1070 AMP! Extreme, ZT-P10700B-10P, 8GB GDDR5 IceStorm Cooling, Metal Wraparound Carbon ExoArmor exterior, Dual-blade EKO Fan, Spectra Lighting, PowerBoost, FREEZE fan stop) and am currently running dual monitors (a 34 in 3440 x 1440 60hz and a 28 in 1920 x1080 at 60hz). I only game on the 34 in, but I've thought of adding another monitor for more multitasking. It would be another 1920 x 1080 at 60hz. Can this GPU handle all three monitors?

Solution
Yes, as long as you are gaming on your main 34" while the other 1080p's are just showing non-GPU-itensive tasks (web browser, movies, utilities, office, etc.), the GTX 1070 can handle the 3 monitors with ease.

But if you'll be if gaming on all three simultaneously (extended window/surround-like), the GPU will surely struggle on very high detail settings.

Solution
I definitely will only be using monitor 2 and 3 as multitasking (videos, web browsing, etc). I don't enjoy gaming on multiple monitors, I tried it and it just wasn't for me. :) That's why I got the 34", to game on and using the smaller monitor(s) to multitask with.

Thanks so much @raisonjohn! :)
