GTX 1070 SLI vs gtx 1080Ti

My question is... what is more worth? another 1070 (i already have one) or a 1080Ti

Currently my mobo doesnt support SLI but i plan to upgrade from i5-4460/z97 anniversary/16gb ram to 7700K/Z270 SLI/16gb
My psu can easily handle any of them

Games i will be playing mainly are

League of legends (XDD)
Gta v Online
Euro truck Simulator 2 Online
Rainbow six siege
Black ops 3
Assetto corsa
City car driving
Watch dogs 2
And maybe for honor

I play on triple monitors 1080p (5760x1080)

Another question is if the 8gb will become obsolete? Since i have noticed some games using 6gb vram on my set up..

Always get the best single GPU you can afford. Only SLI if there is no better GPU then you have and you still need more horse power. 2 GTX 1070s perform close to a single GTX 1080Ti when SLI is supported when it's not well you get a single GTX 1070. Go with the GTX 1080Ti.
 
For the most part yes most of those games scale well/well enough in SLI. I use SLI myself with 2 GTX 1080s (I bought both when the GTX 1080 was the top card out). As long as you know the short comings of SLI and can live with them...I see no reason not to get another GTX 1070 if your dead set on a higher frame rate in SLI games and your not willing to go GTX 1080Ti. If it were me I would still try to find to make a GTX 1080Ti work but budget does dictate all in building.
 
Well I guess i will firstly save money to upgrade my cpu/motherboardram cause in some cases there is already a small bottleneck. What concerns me is until when 8gb will be enough.. Like the 980Ti came with 6gb ram and now the replacement of it has almost double vram..
