for my psu it has a single wire that has two 8 pin connectors at the end i can plug into the gpu which is whats required, two 8 pins to power it

my question is should i just use that or is it not enought power, should use two individual 8 pin wires that both plug into the psu rather than the one wire with dual 8 pin head

Any half decent PSU will not provide cables to use unless they're safe to do so. Those 8 Pin cables are rated at 150W (at 12V) each. Any decent PSU will ensure the supplying cable is of sufficient quality to provide the 300W (at 12V) required.

Provided that your PSU is at least okay, you're absolutely fine with a single cable.
