Gtx 1080 vs. 1070. CPU bottleneck?

Hello. So, I am new to PC gaming and Tom's Hardware for that matter. So please bear with me, if I ask any silly questions. I have some questions regarding several components within my rig.

System Specs:
CPU: i7-4790s
Ram: DDR3 @1600 MHz.
GPU: gtx 750(Soon to become a gtx 1080/1070 once I upgrade).
PSU: EVGA Supernova 750.
Monitor- Dell S2716DG (1440p,144hz)
Motherboard: Asus K30AD_M31AD_M51AD_M32AD.

So, my big problem is choosing between the gtx 1080/1070. There is no issue with price as long as the cost to performance is good. In other words, do you guys think the gtx 1080 is worth the price? I know a lot will say no. The thing is, I plan to go into VR which makes me believe that the GDDR5X memory will significantly help in that aspect. Also, my motherboard only has 1 x16 slot while the others are x1 slots, which further compels me to get the most powerful card as SLI isn't an option unless I upgrade my motherboard further down the line. Another reason that compels me to get gtx 1080 is that I want to get as close to 144 fps on 1440p as possible on games. If you guys still think after all those aspects mentioned I should get a 1070 as the price isn't worth it, please let me know. Another thing is, can you guys recommend me a custom card for either one you suggest? I was looking into the hybrid 1080 for overclocking so that temperature won't limit my gpu's capabilities. Or, do you guys suggest putting an EK waterblock instead of getting a hybrid 1080/1070? My last and final question is, do you think the i7-4790S will bottleneck my rig? I know for sure 4790 and 4790K won't, but the S version makes me wonder if it will bottleneck my rig. Thanks for all the help guys and sorry for the thread being so long.

I'm looking to get the Asus Strix OC version (have a couple of the 980s and a 980Ti) though waiting a bit to see if they are going to follow on and release a Matrix edition

Ok, but do you think my cpu will be a bottleneck? Also, what custom card for the 1080 do you suggest?
