Gtx 1080s SLI Vsync or No?

With the struggles of SLI in the past, I gave up on my two 980ti strix cards and just went with one.
I was able to get my hands on a pair of GTX1080s and have noticed a bit more ease running them in SLI, so I have some questions maybe some of you guys who SLI might know the answers too. My system specs are:
i7 6700k 4.2, 32gb ddr4 2400 crucial sport, z170 sabertooth mark 1 (brand new as of yesterday)
two Founders Edition GTX 1080s Overclocked to 1985mhz with drops to 1880mhz
(pretty conservative fan curve keeping temps around 74c on the top card and 68c on the bottom underload. AX860 and plenty of fans.
Monitor is a 1440p 144hz acer (no gsync)

So I have noticed a better steady performance in games like GTA5 with the in game vsync to half but numbers all over the place when off, from 135fps and drops to 69fps. The inconsistent fps bothers me so I lock it at 72fps with half vsync. Should I be changing this stuff in the control panel? I really never used vsync with one card.

Games like fallout 4 are a whole other mess, Goes from 144fps inside to 69 and sometimes lower FPS in the city areas. I can seem to get a steady lock on the FPS in that game.

Some other examples of games that do well consistently and keep that fps high are battlefront, battlefield, project cars and phantom pain.

So I guess what I am asking is how to get the best out of SLI in the control panel.
I also own a 4k sony bravia and I have yet to try it with this setup.

Yeah I am with you. I can't stand inconsistent frames and prefer to vsync out @ 60hz (4K UHDTV for primary rig). But even when using a monitor I prefer vsync if gsync is not available. So yeah if you want to find the minimum frame setting you need in each game and vsync from there since you have 144hz...I'd do the same thing if i were you.

This might be weird, but I feel my 4K 60hz tv in game mode almost runs just as good, if not better then my acer 144hz 1440p with fps only lower by a margine. Might just be the 1080s are showing more improvement in sli for 4K or 1440p 144hz is just as stressful. I hate 60hz though, it's okay for games that are not competitive, but games like csgo and even going around on the desktop feels sluggish after the switch to 144hz. The Sony 4K also only has 0.23 input lag on game mode.. call me crazy ...I can tell the little latency difference with the 1ms to the 23ms.

yeah 4k might allow them to stretch their legs a bit more. And yes I hate the input lag (mine is rated @37 ms with 4:4:4 subsambling though in practice i get low 30's or i can drop it to 4:2:2 or less then i can get 21ms rated 17-19 in real word) compared to monitor but big screen is nice. I do wish a UHDTV had 4k @ 120 hz with 4:4:4 subsampling but this was the best set at the time i bought.
