When you say a bit of on increase, am I looking at something on the order of 10% or 30%? The reason I ask is that I have a single 560 Ti in my possession. I am wondering whether to just return it and buy a more serious solution or to simply buy another one.
I can say from personal experience that SLi'd 8800GT's are comparable with a single GTX280/GTX285 and that a single GTX560Ti is comparable with SLi'd 8800GT's but SLi'd a pair of GTX560Ti's are far better than a single GTX580. I just think that you may be disappointed with the performance of a single GTX560 if you compare it to your current setup.
Your rig would be able to run SLi'd GTX560's easily, whilst you would get even more performance from a CPU/motherboard/RAM upgrade like a 2600K or similar I think you might still see a bit of an increase from what you have now but a single 560 would be a downgrade albeit one with DX11 capability.

in my opinion you have enough power right now to skip this entire gen of cards and wait for the next major upgrade, ie. the 7000 series which are supposed to be a large jump due to a die shrink, unless you really want Dx11 right now
that would even be a good time to move to an entirely new system

Thanks for the information. I will get the 2nd card. This should hold me over until my Ivy Bridge/7xxx or 6xx system.
