I am looking at getting either SLI GTX 760's, single GTX 770 Classified or a single GTX 780. I live in New Zealand so the prices are a little high for the 770 and 780 (GTX 770 Classified, $997.00 NZD, GTX 780, $1100.00 NZD) or I could order two GTX 760's from the USA for $350.00 - $400.00 NZD each.

I currently have a 750w power supply so that's efficient for SLI and only a single monitor. If I do get the 770/780 I don't think I would put them in SLI for a year or two if I do decide to go down that route.

Anyone have any ideas what to go with?

That is such a huge huge difference considering it is 3 years old. Anyway, SLI GTX760 is the best price/perk right now since it is cheaper than even a single 770. I'm sure you'll be glad. Good Luck!
Currently, dual 760's will outperform a single 770 and probably a single 780. It's up to you. You can get good performance now, or great performance later if you get a single 770 or 780 and add another in the future. Your PSU has the wattage, but what brand is it? You definitely need a good quality PSU to run two GPU's.

I would go with the SLI GTX 760, considering it is 800 NZD compare to $997 and $1100. It will offer better performance now and you would last until the next generation upgrade(I.E GTX 9xx or higher) If you go with the 770/780 and only SLI in 2 years, I am sure there are better cards that will out perform 2 GTX770 2 years from now considering rumours of NVIDIA Maxwell and AMD Islands Family such as Pirates.

Neo, I have a Cooler Master GX 750. vinhn That's a good point, I think I'll go with the 760's. It beats what I'm on at the moment by a long shot (GT 420) Going from that to SLI 760's I'll be very grateful for the performance increase and in a year I don't think I will mind turning down the graphics in game to "High" or "Medium" since every single game I play on now I run on "Low".

Personally I'm more a fan of single card setups for their simplicity, lower power consumption, and less noise. You say you're playing on a single monitor so a single strong GPU is more than sufficient for that. However, as you note, you may be able to score two 760s for less than a 770, so that's definitely worth considering.
