Guidance needed on AMD to GTX equivalents due to budget

My budget is around £800, more or less.

There is a building video that I will refer to extensively as I am still quite new in this field. How can I reduce the final price of this build without losing much of the performance?

I was thinking of changing some of the components (like the GTX 1070) to its AMD counterpart for price reduction. Would this be viable?

For my personal requirements I need a PC that can do just about anything with moderate - high demand. The PC needs to be able to handle a basic - moderate, 'student' level of photoshopping, and games running at 60fps on high to maximum settings.

For anyone with any knowledge of gaming, the games I would like to be able to play with this PC aren't anything hugely demanding, just the newer Assassin's Creed games, the Witcher games, Dark Souls, and long periods of time on games such as DotA 2. Games like Crysis 3 are ones that I don't expect to play without severe FPS drops on medium to high settings.
 
For a 1080p monitor drop the 1070 for the GTX 1060. DO NOT CHANGE TO A AMD PROCESSOR.
A lot closer to 800.
