I have an.8th gen. Intel i5-825OU Processor(6MB Cache, up to 3.4 GHz), with an installed 1TB 5400 2.5" SATA Hard Drive. Can I upgrade to a 1TB or even 500 GB PCle SSD?

You're not going to notice a difference between a SATA and PCIe SSD anyway.
