This is for a new build. Which of the components must I ensure will work with UEFI? MOBO, CPU, GPU or all components?

MB, because it is old. If it does not have the UEFI BIOS, anything you can do.

A modern motherboard will have uefi.
Some older boards supported uefi and bios.
Old boards only support bios.

No, not even on boards that support both uefi and bios. Thats a bios settings marked csm or uefi.

Most modern boards are uefi only. They have no bios setting.

That is good new, and you can use either the UEFI or legacy, whatever you like. But the UEFI is better.
