The question is self explanatory:

Will be playing on 4 monitors all at 2560x1440 and want to max crysis 3 and that sort of stuff? I'll be overclocking both to the limit. which one should I get then?

Yes, the 780 beats the 7970 but that's at 1080p/1440p. At 4 monitors, 1440p, you're gonna need all the Vram you can get. 7970 will do the job, plus it should be a lot cheaper, so get 2 of them since you want to max out crysis 3. Even 2 7970s cannot max Crysis at that resolution. You'd need 3/4.

How about on a single 1080p monitor? would you still recommend the hd 7970 6gb vs the gtx 780?

For single monitor go with the gtx 780, but if you sure you will get more monitors in the future(or a 4K display), buy some 7970s.

I've read that the GTX 780 is overpriced. is this true? should I get gtx 760 2gb and SLI those? Or wait for the AMD 9xxx series to come out. If they're not overpriced, I'll buy one of those, if not I think one HD 7970 6gb is enough. What do you think?

If you plan on going multi-monitor in the future and don't have a GPU preference, get the R9-290x when it comes out.
