I'm installing another SSD into my system for a total of 2x240GB SSD's and im going to put them in raid 0 and I was wondering if I could do a nightly backup or clone of the data on the raid to a 500GB hard drive.

Solution
You can use Macrium Reflect to do a daily/weekly full back/clone to another HDD.

I have a few RAID0's in my server and have other hard drives to do backups.

Even though yes RAID 0 is less reliable, and yes you won't see any speed difference unless you are copying big files to itself, but RAID 0 is a good way to get bigger space when you are working with what you got so long as you know the risk.
I don't recommend RAID0 as it's less reliable, plus it's probably not going to make much obvious difference.

I've tested SSD's of wildly differing performance and it seems that once I get any SSD it helps a lot, but beyond that an even better SSD is hard for me to notice.

But...

*Yes, you can do a backup. Just buy Acronis True Image and setup an Incremental or Differential backup (bit of a learning curve for auto-deletion etc). Choose the 2nd highest compression level (highest takes far too long for minimal space reduction).

CLONE?
You could but I wouldn't do it. You won't capture any changes, so it's best to use Acronis TI.

DAILY?
I suggest weekly.

OTHER:
You will have to delete all the data on the SSD to make a RAID0 setup. I believe THIS should work:

1. Use Acronis True Image to make a backup image (compressed), and also create a DVD or USB boot disc (to restore backup)

- Acronis TI-> tools-> Rescue Media Builder

2. test the new SSD to be sure it works

3. shut down, then unhook all drives to be safe, EXCEPT the two SSD's, then go into the BIOS and setup a hardware RAID0 config

4. attach HDD back, and boot to Acronis CD/USB

5. RESTORE the backup to the RAID0 SSD setup

6. test

7. DELETE the backup, now create a (weekly?) Incremental backup, 1+4-chain, 2nd highest compression, verify etc. (a bit confusing at first)
