Good day, I am using an old 2000's case for my rig and its sports 8 tb of storage with 5 x 3.5 HDDs.

I am planning on purchasing modern tempered glass cases that only supports 1-2 3.5 HDDs. Since being limited to install only 2 HDD in my new case and transferring only the important data on the two HDDs and the three HHDs that can't fit in the new case which is full of game installers, movies and music. Will my data be lost if i just store my HDD without power and only access them via an HDD dock if I needed some of those files?

If you need more storage space, then get a case with more storage options.
CM Masterbox CM694 - for example

"Will my data be lost "

No

But also, don't have only one copy of any data.
Backups of anything you can't bear to lose is cheap and easy insurance.
