Question HDD VS SSD for Server

In short I am looking to run a heavily modded server (around 500 mods) with: (sorry couldnt find BB Code on pcpartpicker list so...)
However considering I won't be actively using the PC but it'll just be running to keep the server going would it benefit from the extra speed of a 4TB SSD (any format - Costs around £170ish) rather than a 4TB 7200rpm HDD (£80ish+)
Currently considering swapping out for a 4TB Seagate Ironwolf Pro 4TB HDD (7200rpm) for around £109 currently
Note: The build is still being planned nothing has been bought yet.
Note: The server is more for Minecraft which is why I went for the 13100 with one of the best single cores at its price point (I do know I could go for a 12100) rather than an Xeon

Also if you know anything about networking am I right in assuming having more ports open (to a degree) can help with handling data. My assumption is that since there are more ports the data going in and out of the PC (I will be using port forwarding for the server) will be able to handle the data better since it wont be going in and out all through 1/2 ports but it can spread the data load across all available ethernet ports to reduce the controller latency per each ethernet port?
 
My 10Gigabit LAN only comes into its own when I'm shifting hundreds of Gigabytes of data between SSDs.

When copying data between TrueNAS servers filled with multiple hard disks in RAID-Z2, there's only a slight benefit over Gigabyte Ethernet. Despite this, I do see some improvement from 10G SFP+ Fiber Optic links, but not all the time.

Ditch the quad port Gigabit card and 10Gig Ethernet unless the rest of your system runs at 10G. It's a nice feature but not essential.
