I have an AMD XP 2000 (A 6-8-0)
Using a nice big Heatsink and ball bearing fan
I'm trying some overclocking, increasing FSB/Memory on a K7S5A PRO
I've seen the CPU get as hot as 49C
How hot can this CPU get before becoming unstable ?

Take a look at this web site http://www.overclockers.com/tips400/ it offers
some insight to over clocking and temperatures for AMD athlon processors.
In my option anything over 45°C from the onboard thermal resistor is to hot
when over clocking if you want a stable system. If the onboard thermal
resistor reads 45°C them there is a very good chance the CPU die temperature
is between 55°C and 60°C. BTW about the best OC for that CPU 680 is between
1800 and 1850 Mhz max although with good air cooling I have seen then as
high as 1900 Mhz in general. I am sure that there is some one out there who
has obtained a high OC but in general 1850 Mhz is about max for this CPU
setting with everything stable. This site
http://www.lejabeach.com/ECS/ez.html might help.
