I'm just going to give it to you like CPU-Z said, as I have been trying to figure out what in the world I have.

My PC is running Windows 11.

Motherboard Tab:
Manufacturer: GAME REVOLUTION
Model: B75-M
Bus Specs: PCI-Express 2.0 (5.0 GT/s)
Chipset: Intel Sandy Bridge (rev. 09 in box on end?)
Southbridge: Intel P75/B75 (rev. 04, same thing, on the end)
LPCIO: Nuvoton NCT6779

BIOS Tab:
Brand: American Megatrends Inc.
Version: 4.6.5
Date: 08/25/2020

Graphics Interface Tab:
Bus: PCI-Express 2.0
Current Link Width: x16 (max. supported: x16)
Current Link Speed: 2.5 GT/s (max. supported 5.0 GT/s) (Slower than it should be?)

If there's anything else just ask but that's what it gives me. Any help is much appreciated.

Run this it should show it on the right hand side after the test.

It comes back as a GAME B75-M and I'm the only user that's ever benched it, apparently. Main thing I was wondering is whether it has an M.2 slot and whether I can put more RAM in it. I have one 8gb stick right now but I'd like to upgrade to a 16gb kit.

I assume the builder changed that info then. Take a look at the motherboard itself, you may see the original make/model stenciled on the motherboard itself.
Okay, thanks. Is there anything would give it away? Specific area to look?

Can you show a photo of the board?
(upload to imgur.com and post link)

B75 board is highly unlikely to have a M.2 slot.
Those started to appear with 80, 90 series Intel boards.

It should support up to 32GB of ram (with 4 ram slots)
or up to 16GB with two ram slots.
It has 2 slots, so with what you say I can probably do a 16gb kit, and yeah I can take a picture of the board if you want. I've never really seen one like it, and I searched a ton, so that makes me think it's a custom one or modified one?

(edit) For some reason the photo will not upload.

Do you have the make and model of the PC itself?
Was this purchased from a big well known company or a small/local/boutique?
I know the case is some brand I'd never heard of. Musetex I think. As for the make and model, I have no idea. In the device manager there's 'ACPI x64-based PC' and 'to be filled by O.E.M'. Couldn't find specific markings on the case either.
