I want to build a desktop PC and my requirements are:-

Web browsing
Photoshop
Run Ubuntu in virtual machine in host windows
Light video editing
Playing only 2 games CS:GO & GTA 5 and (sometimes, not often recording gameplays when I see someting cool or an interesting in the game).

So, which processor do I need (i5 or i7) with a good GPU and how much RAM do I need?

i5 minimum for games, i7 for games and video edition

for video editing like adobe premier and after effects, 16 gbs of ram minimum for 1080p resolution videos, system easily can use 12 gbs when working on a project, if it doesn't find that, it will use hard disk and that is slow, making longer the times to convert or add effects, adding hours in some cases instead of minutes

if you plan on use adobe tools, you need a good gpu, a gtx 1050ti should be the minimum you buy, the gpu has cuda cores technology, that technology works with adobe tools better than the amd technology

the more cuda cores the better, that 1050ti has720 iirc, if you cna buy a faster gtx, it will have more cuda cores, also the more ram it has, the better for after...

for video edition is ideal to have many hard disks or many ssds

one hard disk or ssd for the project and another for the os and another one for the final project, that will improve the performance of the machine

Mostly I will be using it for web browsing and gaming.

So, which processor do I need (i5 or i7) with a good GPU and how much RAM do I need for my requirements to be done smoothly?
 
For what you are going to do, an i5 will most likely be fine, if you have the money get an i7 but i5 will work.
I agree with atijsf that the 1050 will probably be the minimum for games like those.
For a virtual machine you probably want 16gb of ram, and an i7 will come into use here because you can give the vm more cpu cores, but unless you're doing intensive stuff in the vm an i5 will work just fine.
And all this will be good for photoshop and light editing too (but not heavy editing).
