Hello, I recently picked up a RTX 3070 and I'm looking to upgrade my CPU and Motherboard.
I'm looking for pure game performance/FPS. I'm stuck on if I should be getting 9th or 10th gen CPUs, its a bit of a headache.

Assuming 10th gen is better deal for my future and performance I have picked the following: please let me know if this makes sense or if its a terrible idea based on the current and future market:
CPU: I7 - 10700K (LGA 1200 - 400 Series)
Motherboard: Asus Prime Z490-P (LGA 1200)

Current setup:
RTX 3070
I5 7600K
Corsair H80 Liquid cooling
16GB Ram - DDR4 2133MHz
Motherboard: ASUS PRIME Z270-A (due to this I wasn't able to upgrade to anything good unless I swap)

Also will the new CPU be compatible with my H80?/Is the ram still compatible with new motherboard?

Any better suggestions are welcome! Thank you for the help

Solution
Psu: That's not going to last. The power spikes on RTX 30 will cause mid range psus to shut off. Don't confuse it with total power draw, as that's not the problem.
Gonna need a higher tier psu, like the Corsair RMX for example.

Monitor: I have this same monitor as a secondary screen. This device doesn't support any kind of adaptive sync tech...

Cooler: No, because your H80 is on par with some 240mm units. 280mm or larger would be ideal for that cpu.

9th gen is already dead - let it die.

Someone else will need to answer this; I don't believe in the concept of futureproofing.
I will say that your current cooler won't cut it with that cpu. A 10600K would be a more reasonable pairing.

Also will the new CPU be compatible with my H80?/Is the ram still compatible with new motherboard?
1)Socket LGA 1200 has the same mounting dimensions as LGA 115x.
2)Yes.

What kind of monitor/screen are you pairing this gpu with?

You left the most important part out: Make, model, and age of the psu?

PSU: CX Series™ CX850M — 850 Watt 80 PLUS® Bronze (roughly 2 years)
Monitor: Asus VG248QE 144hz
- Would the Corsair H100i be more reasonable for the I7 - 10700K?

I do see that the I5 10600K seems almost 1:1 comparison in benchmarks and for $100+ cheaper. So thank you for that suggestion
