Help on specs for non-gaming PC with 4k monitor with biz specific apps

I'm looking to build a new PC for non-gaming purposes that would be used for work (stock trading), web browsing, and occasional TV/movies (non 4k just 1080p at the best probably). The stock trading apps I use just for reference in case anyone knows are TOS and TC200 along with Trade-Ideas.

The monitor I plan on getting is the LG 43UD79-B (43inch 4k) and use it's ability to split into 4x 1080p monitors. Right now I am doing exactly what I would be doing on the 4k monitor but have 2 separate smaller 17inch monitors at 1280x1024 (the applications are stacked/minimized right now so with the 4k monitor I could.see everything at once) The PC I am using now has a G4560, 8GB RAM, and integrated graphics.

For comparison I looked at W10's resource monitor to gauge how much of the PC was being used during peak times. CPU was between 35-65% with the midpoint at 45ish percent with some spikes to 90-100. RAM used was 5.3GB and GPU was steady at 20-25% utilization.

For the new PC, I am looking at the following and would like advice to see if this is enough for what I want/which part to get.

CPU: AMD Ryzen 2600X or Intel i5 8400
GPU: GT 1030 or GTX 1050 or RX 550/560
RAM: 8 or 16GB DDR4 (is 16 needed if I am using 5.3 at the most right now?)
SSD: 256GB (I'd like the best and I assume that is the samsung evo right now?)
Mobo: Not sure yet since I haven't decided on AMD or Intel. Any suggestions or things to know?

just for standard stuff id recommend going the intel route. if you would like to overclock you might be better with amd but i think you just want faster speeds at factory. the gt 1030 is very capable and i have the mx150 variant in my laptop and it is awesome. despite this you might want the gtx 1050 becuase it is easy to get scammed with the gt 1030 because nvidia released a gddr5 and a ddr4 version. if you decide the gt 1030 then ensure or even ask again to make sure you are getting the right one. 8gb of ram is good for now but as applications require more you can probable just chuck another stick in a any point down the line. hope this helps.

Thanks for your help. I might just get the 1050 just to be safe. As for Intel vs AMD I thought the AMD was better since can do 12 threads vs. 6 on the intel and so it might be better for running multiple applications. Also, I think the AMD stock cooler is better than Intel's so that helps.
