Question Help Regarding i9 Overclock

Hi,
I have been using i9 9900k since past 3 months. Earlier, I OCed it to 5 Ghz on all cores at 1.32 V and it was stable. Checked via Aida64 stress for around 6 hrs and it didn't cause any trouble. But since the past 2-3 days, games kept crashing so I checked AIDA64 once again and now, it crashes in just 2-3 mins.

So how is it possible that it was stable earlier but now crashing.

Board - Aorus Z390 Master
PSU - RM1000X Corsair
Cooler - Corsair H150i Pro
Cabinet - CM H500P Mesh

Yes, that is called burn-in. Characteristics of components fresh from the manufacturing line will change by some amount over time. That's part of the reason why AMD, Intel, Nvidia, etc. don't launch SKUs all the way up to the absolute maximum clock frequencies that can be achieved out-of-the-box - that's their headroom for the 3-5 year warranty under worst-case conditions. When you overclock, you basically throw that headroom out the window.
