Help Required in Building NAS

I'm looking to configure NAS, but i have a security concerns as of nothing is safe on internet but still i have to go with it. Well below is my requirement can you please help me to guide what is best for me to use.

1: Security is my first priority (Hardware encryption or any other security in case of theft NAS box or HDD).

2: Required 5 Tb of storage Redundant (I don't want to lose my data, Is 2 bay drive works for me ? i dunno the knowledge of RAID)

3: Mostly i want storage to connect with home wifi router range, over the internet is my 2nd priority, but i like the option if i'm leaving the home so i can enable it to access over the internet otherwise i don't want to connect everytime to internet.

3: I love to play games and thought if it's faster enough to connect with desktop via usb cable or Ethernet or may be thunderbolt (what ever best to access fast data) a little help how it works.

4: Is WD cloud safe to use ? i prefer to build my own with open source app to connect with mobile.(There are alot of WD cloud that mess with head what to choose)

5: Most of the data are office work ,pictures, movies, games & music.
