Help upgrading my PC

Currently I have a Pentium G4560 and a GTX 1050 Ti on an MSI B250M Mortar Arctic and a 750 watt PSU. I was considering upgrading my PC soon to a GTX 1060 and I was asking for help with which one I should get, I mostly play racing games and I was going to mainly want to run them on higher settings such as Forza Horizon 3 or Forza Horizon 4 when it releases. I was also considering the possible bottleneck and was going to upgrade my CPU at some point to an i3 8100 and was wondering if I would need to do any updates to my motherboard to allow this CPU to work.

You will need a new motherboard as the one you have will not support the 8xxx series CPU.

And if you're going that far I'd consider more of an upgrade, especially for your goals. i5-8400 at least with a GTX 1070..

As said above, the 8100 would require a new motherboard. It would be far easier to just drop in an i5-7500, or i7 7700.
