So mbr2gpt will not work in my case due in part to wrong format & partition sizing. So, I’ll be reinstalling windows 10 so I can correct the partitions. While this will suck, no biggie.
However, when I do my fresh reinstall, will some on please tell me how to partition it correctly, both format and sizes? (I.e. system reserved size? C:\ size? Restore size? Leave any unallocated?)

Just don’t want to go through the process twice 🤦🏻‍♂️

Thank you very much for your time & assistance!

Do you intend do do a "clean install"?

If yes, don't worry about it. Let the Windows installer make whatever partitions of whatever sizes that it cares to.

All you have to do is have a proper USB installer, boot from it, and delete ALL partitions shown when given that choice early in the procedure.

Be sure to disconnect ALL drives other than the one that will receive Windows before you start.

You'll end up with 3 or 4 partitions and likely nothing unallocated.

Evaluate it all after it finishes, via Disk Management.
