I have been saving up some money for some upgrades. I am thinking about changing the CPU and adding another monitor and an SSD. Budget around 1000 dollars. Help with some ideas?

Those are my specs now:
Processor Intel(R) Core(TM) i7 CPU 920 @ 2.67GHz
RAM 8.0 GB DDR3
NVIDIA GeForce GTX 970
Operating System Microsoft Windows 10, 64-bit
Version DELL INC. 1.0.3
Drive 1 HDD
Size 172.7 GB
Drive 2 HDD
Size 292.5 GB

Solution
120GB is enough for OS and couple of programs only.
You will have to store your games on other disk. Guess it will be slower HDD.
the 250GB is only 100 lei more (30% for double the capacity) http://www.emag.ro/solid-state-drive-ssd-samsung-850-evo-2-5-250gb-sata-iii-mz-75e250b-eu/pd/DCJ9BMBBM/#250%20GB
the memory, you want to go with kit of two dims.
For 8GB (2x4GB):

For 16GB (2x8GB)...

Something that paires good with the 970, as now, i have a 1920x1080 LED 60Hz monitor, i don't want ti to be that different from this one. This is PC is used for gaming only.

Than IMHO, look at the 1080p@144Hz or 1440p@144Hz monitor - they are much more fun for gaming.
you can find a lot of them in 170-500$ range.
For gaming, you can go with 500GB SSD like EVO 850 - 160$
i7-6700K+Z170MB+16GB ram - around 500-600$ depending on MB/RAM/Cooler selection

What do you think of those? Shouldn't 120 GB be enough for the SSD?

Again, only 100 lei more (50%) for double the capacity - worth to consider.
Also, you are going to need a mother board and cpu cooler.
This is awesome motherboard:

This is a cheaper, less advanced option:
