Is the I5 6600k a good choice of cpu for light multitasking and gaming like just cause 3 and skype and potentially a multi moniter setup?

For multimonitor setup i would go for an i7, If you can't though then an i5 is still decent choise

The i5 6600k should be perfect. I've had an i5 3570k for about two years now. I have two full HD monitors. I also play games like GTA 5 and Fallout while skyping people and searching the web all at once with no problems. So, a 6600k should have no trouble doing what you've described. Hope this helped!
