Hey, would this build run the witcher 3 @1080p and other high end / new games?

Yeah having extra watts just means your PSU won't run anywhere near it's maximum. That should mean it would technically last longer that a lower watt PSU that is ran at near max capacity.

The real world situation though is that it'll just be unnecessary spending, as long as the PSU you pick is good.

I know my PSU is a little bit overkill but it also ensures if I want to do some upgrades / add cooling later I guess. So, all the parts I chose fits ? Can I OC that motherboard? Not heavily maybe but CAN I overclock it?

That's one of the things im a little unsure about, the mobo

OH! and I forgot to ask, do you think / know if these parts will fit in;

That EVGA Z97 FTW should overclock well. Here's some results of overclocking the 4770k on the same board http://www.overclockers.com/evga-z97-ftw-motherboard-review/ They got it up to 4.9Ghz, although it could've just been a lucky chip.

That Haf 912 should fit everything everything. Space for the H100 in the top, and up to 270mm gpu's (yours is 241mm).
 

Everything will fit easy. The Asus board is better for overclocking 8 phase power delivery instead of the 6 phase of the EVGA.
For the 912 case remove the center drive cage that will give you less restriction on the airflow.

I'm actually kinda suprised that I put up some good stuff that didn't need change!
Btw, it doesn't matter that the PSU I chose ( EVGA Supernova G2 750W, 80+ Gold ) is not gonna be fully used. I mean for example; It can't hurt if my PSU have like 1000w and I only use 500? Right?

Actually you picked a very good power supply you have enough watts to add anouther 970 to run SLI in the future if you wish.
