Help with potential gaming pc

Dear all,
Recently I was thinking of building a new gaming pc, And as I am not very experienced in this a few questions arose. The build that I put together is:
CPU: Intel core i5 8600k with a cooler master hyper212 EVO
Motherboard: Asrock Z370 extreme4
RAM: Corsair 16GB DDR4-3000
GPU: ASUS GeForce GTX 1080 Strix Gaming / GIGABYTE GeForce GTX 1080 G1 Gaming
SSD: Samsung 960 EVO 250GB
HDD: Seagate Barracuda 2TB
PSU: Cooler Master V850
Case: Sharkoon DG7000-G

Now, the questions that I have are the following:

Is the power supply that I chose too large or is it wise to take this one even though it might be a bit larger then need be?

Which of the two GPU’s would be a better purchase? Considering noise of the fans and performance etc.

Finally, is it wise to buy this system now or should I wait a bit before doing so? Considering the GtX1080 is already 2 years old and I heard Nvidia new cards might be released soon and maybe this new release would drop the price of the current card which I am considering to buy.

Any other opinions or criticism on the build is always welcome as well.

An 850w PSU is kinda overkill for one 1080. It's only practical if you plan to go dual SLI. You can easily suffice with a decent 600w unit for one 1080.

As for whether to build now or wait, might be best to at least wait a few months if you can. Some are now speculating based on recent info that Nvidia may be releasing their new line of GPUs Sept or sometime this fall. The specs are looking pretty incredible, and even if the 1180 costs more than you can afford, the 1170 has slightly better spec than a 1080.

It depends what res you're playing at though. If you're only running 1080p, best to just get the best price you can on a card that can run any game at...
