High-end games freeze, then crash at various times

My PC crashes when playing newer games like AC: Odyssey, Destiny 2, and Shadow of the Tomb Raider. It's typically about 10 minutes into the game (no absurdly high settings). The game freezes and then quits to desktop with no explanation. This doesn't happen when watching 4K video or anything else - just gaming.

I have gotten the occasional blue screen but nothing crazy and never while gaming.

I've tried memory testing, enabling XMP. Haven't tested my CPU. I'm a little worried that my power supply isn't enough (see bolded line below).

If you guys have any suggestions, I'd really appreciate it!
