Farcry 2 and Crysis have some of the best jungles available out there but unfortunately for you they're not adventure games, they're first-person shooters.

The Witcher 2 has great graphics, but its not set in a jungle. Lots of forest though.

I would throw Just Cause 2 into the adventure games category. Graphic quality is definitely not up there with the FPS's, but it's very good for an adventure game.

Skyrim (with the hi-res texture pack and other vegetation/ graphics mods)
I also believe Alan Wake to have intensely demanding graphics.
Far Cry 2 is one for sure!
