How bad is the bottleneck on a i5 7500 CPU with a 1080 ti

I was wondering how much my CPU would affect my 1080ti at 1080p gaming yes I know its overkill but I already have the card on the way what should I expect and how can I minimize it. I've heard that increasing your in-game settings helps take some of the load off the CPU is this correct? I am gaming on a 144hz monitor with 16 GB of 2400 MHz of ram.

Not a whole lot you CAN do about it. Available settings will vary by game, but you can turn up textures, AA(antialiasing), resolution, HDR...
Then there's also the issue of how the game(s) were coded to use resources. Hopefully most of the games you play aren't of the high cpu/low gpu variety... that won't help things at all.

Either return the card for a 1070, or get a 1440p monitor - that cpu can't keep up with that card at 1080p. A higher resolution will give it more breathing room.
