How best to upgrade complicated multi boot system.

*I am going to upgrade my pc' storage arrangement and would like some advice so let me state the current config and the upgrade package i have purchased.
Current..
ASROCK AM2NF6G
2 SATA + 1 IDE
8 GB PC2 RAM DUAL CHANNEL
DUAL VIDEO PCI-E VIDEO SPANNING 3 MONITORS TOTALLING 60 inch by 14 inch screen size
Mobo supports RAID MOBO Website
Sata 1 = 500 gb WD Sata 2 = 160 gb WD IDE =80 gb WD
I have 3 installs of windows one on each drive, win7 ult, winxp 64 and winxp and i can boot to any of these OS at boot using custom boot config.

New hardware = 2 x 1 Tb Seagate Sata2 drives Model Video ST1000VM002 1TB 5900 RPM 64MB Cache SATA 3.0Gb/s 3.5" HD Seagate HD spec site
So i want to loose the IDE drive totally and the 160 as well but keep all data and boot options and OS that i have now.
I was thinking of creating on each of the new drive 4 partions and running the new config as RAID. Partion 1- 500gb as primary, boot, partion 2-80gb partions 3 160 gb and partion 4 would be free space.
How would i go about this as far as boot or mbr creation, use BOOTICE or similar GRUB? Create partions first then add boot info?
The data is precocious thus my RAID idea but if anyone has any bright ideas i would love to hear them... check back in a bit CHOW...**
