When you try to start a mac off a hard drive from another mac model (provided the mac admits that OS X version), it usually starts OK. But I guess each mac uses its drivers/extensions. How could I create a bootable OS X disk that is granted to be good for all mac models?. I thought a solution would be this: I start a mac using a disk from another mac model, then do the software update so it should download and install any missing drivers/extensions And so with different mac models till I've created a universal OS X bootable disk. ...am I right. Any suggestions?

I have never had an issue booting my external Mac drive that is running El Capitan on any Intel Mac 2008 and newer so not sure you need to create a universal disk but your reasoning is sound as far as updating each time you boot with your external drive.

I've been chasing this, you can use the last version of el cap and will work fine in most cases, but it may not have all proper kexts for all macs, so if you notice odd behaviour such as fans spinning out of order etc you'd better use the internet recovery partition which installs the original os x and build that came with the machine, or use a netboot image if you have a server for this, as this will ensure you have the perfect OS X install.
