Recently I upgraded for 8gb of ram to 16gb of ram (both ddr4). But when I put my two 8gb sticks in they it only detected one. I checked the BIOS and it said it was single channel I tried to click on it but nothing came out of it .checked the BIOS for around an hour and a half trying to find a way to change it to dual channel. I have the B360M xtreme motherboard with as rock btw.

There isn't an option to enable dual channel because there isn't one - the motherboard should automatically detect two RAM sticks and do what it needs to do. This, however, is not your problem.

What happens when you boot your computer with one RAM stick at a time? Do all 4 sticks work? How about if you boot with ONLY the two new RAM sticks?

You might just have a problem with RAM compatibility. Some motherboards have a hard time with unmatched sticks (or pairs) of RAM.
