[SOLVED] how can i switch my starting OS drive to one of my other two?

I have 2 Hard Drives I want to clean out and turn into data storage drives one being a 500g SSD and the other a 650g HDD. Both have operating systems attached and all i want to do is clean out the files. My old PC was too slow to do this before I replaced with my new one. I tried going into the BIOS but its a bit different than my last PC's.

My motherboard is a Asus Maximus Xii Hero (Wi-Fi).

For my new PC I bought a new HD to install windows. my old HD had windows on it I switched to my new PC but was not able to fully transfer all the data. I also had an older HD and never cleaned it completely.

You can't transfer "all the data".
Programs and applications can't be moved between operating systems.

Move all your important data from Disk 0 and Disk 1 to 2TB drive.
Then clean, repartition and reformat Disk 0 and Disk 1.

a lot of files aren't showing. I think I have to boot from them first to access it.

Files like "what", and specifically "where"?

You should NOT have to boot from that drive.
At most, they would be seen but inaccessible, due to permissions from the old OS. In that case, TakeOwnership.
