I recently got a M.2 SSD (Samsung 860 evo) and i dont know how to set it up in bios i have a gigabyte ax370 gaming 3 mobo

Still not clear, what in the BIOS are you trying to setup? Is it not detected? You don't need to do anything for a drive, plug it in, it will be seen by the system, use it. If you have issues or don't know how to actually use the drive or it's not seen or anything else, you need to specify in the post exactly what you are trying to do and what is happening.

If it's the drive you want to use for your operating system then plug it in, turn on machine, F2 or delete whatever it is that puts you in BIOS. Once there go to boot option and choose the Samsung EVO as boot device if the BIOS "sees" it. If still not sure then disconnect all other drives. (unless you need the CD/DVD for install then leave that plugged in) Then it will be the only drive to install windows on and it should start installation automatically. Again, if the install disc is in the drive. Remember that drive is a M.2-sata III so it will probably turn off the sataIII #3 connector so don't have anything plugged into that. Check your manual to be sure.
