I've looked all around but I cannot find the answer to this. I have a hard drive installed and it is 1 TB of memory, and about 500 used. I also have an ssd that has around 200 Gigs on it. Is it possible to only boot from the ssd but use the hard drive for storage?

Yes it is. I believe 99.8% of all technical answers is already out there, it just that they are not using the precise wordings you want them to be.

Where data are placed depends on the App and most of them default to C:, sometimes you can change, sometimes you cannot, it depends on the App.
