How do people on youtube get more FPS than their respective graphics cards are "supposed to get", even when recording?

I see benchmarks, then I see youtube with an FPS counter, and they are getting way better performance. (as in a gtx 650 bf4, high, 40+fps.) when the benchmarks say you will only get 25-30.

The actual answer is that benchmark sites usually get their results as soon as the cards are released or slightly earlier, so they're working with beta drivers or glitchy drivers. When you see people on YouTube doing better it's usually because that card was released two or three years ago and the drivers are way way more polished for that card on that game. You're not getting an apples to apples comparison, even though it seems like it.
