How do you make honey pickled apples(or peaches :))?

I recently watched Spice and Wolf and the name piqued my interest. I've seen some recipes which seem closer to an apple pie and others including tarragon and sour cherry cherry leaves. Then I saw.... So I came here to see if the awesome members here know as much about food as they do about tech.

Yep, that was the first recipe I saw. I may be asking for the impossible. I am looking for those who have actually made them. I guess I will just have to try a few recipes myself.
