Cooler - Since you're overclocking - Good
Motherboard - Since you're overclocking - Good
RAM - Unless you're dealing with 10GB files or larger, overkill
Case - No issues
DVDRW - No issues
Power Supply - Max power...
Super Overkill.

A single 1080 is top of the line right now, meaning there isn't a lot you can throw at a single 1080 that it can't handle.

You can get the i7 if you are doing video editing or streaming or something, but if it's just for gaming, an i5 6600k is fine. If you're not going to overclock it either, just get the regular 6600 and save some cash

Everything else is just regular overkill or enthusiast level stuff imo

Given that information, I would go with a single GTX1080 and replace the SATA version of your SSD for a M.2 one.
 


CPU - Since you're editing - Good
Cooler - Since you're overclocking - Good
Motherboard - Since you're overclocking - Good
RAM - Unless you're dealing with 10GB files or larger, overkill
Case - No issues
DVDRW - No issues
Power Supply - Max power draw for those GTX1080s is 360watts (180 each). The processor (at stock) draws 130 watts. I'd say you could easily get by with a 750-850watt PSU. I do like the FSP choice however.
HDD - Seems smallish. I'd probably go with a 2TB - So-So
SSD - Good
GPU - Good.

Scale of 1 to 10, I'd give it a 9.4
