What am I missing ? PRIMARY Minecraft machine but will be used OCCASIONALLY for Grand Theft Auto and making YouTube videos and Junior High homework

If you can keep that 1060, I really think you'll be happier while gaming. But if ya gotta, then ya gotta.

All those cards have a min requirement of 350w PSU, so any will work with the 550w you have picked out.
Overall an good build. However you don't need anything near an 850w for that system. Also make sure you pick from the right EVGA lineup. GQ, GS, G2 are good gold series, but avoid the G1 series. Instead of a 850w, pick up a 550w and throw that cash towards a better cooler.

The Cryorig H7 is a smaller tower cooler that cools better than the Hyper 212 Evo, and also doesn't overlap the RAM channels. It runs, depending on the day, $10 or so more than the Evo. Technically speaking, you don't really need either as the CPU ships with a cooler, but the Evo or the H7 will give you much less noise.
 
One other thing to consider if you're going to be doing a lot of online gaming. Wifi, while convenient, has pretty horrid latency and connection issues depending on whats between you and the router. I'd look in to Ethernet over Powerline adapters. It's a bit more expensive than wifi but its generally a lot faster, more stable and lower latency than wifi.

Looking decent. I already posted my thoughts on the ethernet over powerline so I'll leave that part out. What wifi device are you looking at? I'd highly recommend one where you can position the antenna so its not all stuck behind the tower.

Also since you're not using an optical drive, are you married to the idea of that case? There are some really cool and sexy cases out there in that price range that have a clean face front since there isn't a drive bay there.

Phanteks has a number of lines that might float your boat. Some get pretty pricey but the Eclipse series is a nice looking sub$100 case. The Enthoo Evolv ATX is around your current cases price. The Enthoo Evolv ATX Glass is a bit more but full tempered glass side.

Corsair Air 540 is more than your current case, but if you want something a little bit different looking and super easy to work in its a good case. Cube instead of tower design.

Naw, not that I can see. Parts all look pretty solid. I would recommend looking in to a backup solution of some sort. There are external drives from Seagate and WD that have backup software, theres also online backup services like Carbonite. Even if its just a USB hard drive plugged in to the back and something like Syncback Free to manage your backups.
