I intend to add more cooling to the case.

Below are my system specs:
CPU : Core i5-9400F upto 4.1 GHz
CPU-Cooler : Stock - Stock Cooler
Motherboard : Gigabyte - B360MDS3H (https://www.gigabyte.com/in/Motherboard/B360M-DS3H-rev-10#kf )
Graphics-Card : EVGA RTX2070
SMPS : Antec - HCG750
Case : ThermalTake H200 (https://www.thermaltake.com/h200-tg-rgb-2.html )

How many case fans should I add and what should be their size 120/140mm? The case supports 3x120/2x140 in the front and 2x120/2x140 on the top.

Solution
The top of those cases can fit 2 x 120mm fans or 1 x 140mm. They say 2 but if you have a MoBo with a decent heatsink and an exhaust fan it is very tight to get 2 140mm fans mounted beleive me. I have a TT L20 MT with 2 120mm Corsair Pro fans on top, 2 in the base, 3 infront, AIO on the side vent and an exhaust fan at the back and am really pleased with the airflow, my RTX 2080 idles at 32c....

Agree with Solidjake, depends how important airflow is for you, personally i'd slap 3 120mm in the front and one 120mm on the top as an exhaust. Should be enough airflow
