how much clearance in between the gpu and psu shroud do I need for good Gpu temps?

Depends.
Blower style cooler: Doesn't matter. It was designed with tight spaces in mind.
Axial fan cooler: Give at least an inch or 2 or more for space. Psu shrouds impact gpu thermals because it can no longer pull air from below - just front and back.
Liquid cooler: doesn't matter.

It looks ok - until I get to the rear...

It uses those darn punch out PCIe tabs.
You can't put them back in once you take them out, plus they allow even less air to pass through than the usual mesh ones that you can use a screwdriver with - but I guess that's what the small grille on the side is for...
So unless you're fine with removing all 4 of the punch tabs, the gpu will be relying mostly on the front intake; the bottom's blocked, because psu shroud, and the rear... well, you can already see that one.
