They're nearly identical in performance and the 5700xt offers free games & warranty. Plus a 5700xt will only get better with driver updates, a 1080ti is always going to be the same.

i wouldnt get new CPU, unless you stream or do some actual work on your rig, most games dont need more than 4c4T, 6c,6T are more than enough. you are better off overclocking your 2600x.
getting GPU on the other hand will give you FPS bump.
