How much RAM do I actually need for gaming?

I'm building a Gaming PC currently and I am trying to reduce price on my build, my RAM is Corsair Vengeance 2666MHz 16GB (2x8GB) and I read that 16GB is not required for gaming and 8GB is enough. I'm not going to do video editing and all that Sony Vegas stuff. I just want high fps on ultra settings.

With that CPU and chipset you are limited to DDR4 2133. You will not be able to run anything faster so there is no need to spend more on faster stuff. I'd go with 16GB as there are games out now that need it. 8GB is still sufficient for 99% of the time though.
8 minimum and 16 tops, going higher doesn't seem to do anything for games at least. I'm rocking 8 myself and I don't feel like there is any reason for me to go higher. Depending on how many RAM slots your board has try just filling half of them for 8 and if you really feel like it later on you double it up to 16.

Somehow the 2400MHz Corsair Vengeance LPX 16GB (2x8GB) is more expensive than the 2666MHz one.

Yeah there's no point buying RAM faster than DDR4 2133 unless you have a Z170 motherboard. All the other boards out so far are limited to Intel's officially supported speed. Faster memory works fine with a Z170 board though. I'm running 16GB of DDR4 3200 cas 14 with my Z170/6700K.
