How much vcore for CPU overclock?

I wanna OC my old xeon e5430 to 3GHz.
Its currently running at 2.66GHz and (according to cpuz when in full load) at 1.104V.
Approximately how much would i need for pushing it up to 3GHz, and probably even 3.5Ghz when i get a better cooler for it?

As much as you need until you hit the voltage or thermal limit. I would research what voltage and temp the CPU can safely handle and work your way up, stress testing until you stop getting errors. Of course if you're overclocking with more than just your multiplier, you need to account for memory controller speed/voltages and other components which makes overclocking harder.
