As the title say, how many wattage would I need for my build?

cpu: i5 3570k (will be oc'd to 4.5 or 4.6)
mobo: asus maximus gene v
ram: 2x4gb ripjaws x 1600 cl9
cpu cooler: noctua nh-u12p se2
fans: around 5 or 7 fans
video card: sapphire 7850 oc edition

Solution
Without a desire to X-fire your video card, a 550-600W would work (although I believe your video card documentation will suggest 600W)
If considering adding a second 78xx in XFire, I'd say750-800W

From XFX HD7850 "Minimum of a 500 Watt power supply"

Oh sorry about that, there will be a 1 or 2 TB HDD and an optical drive. I also plan to add a mini PCIE wifi card that can be placed in the mpcie slot on the maximus gene v board.

My simple suggestion is to look for each component watt requirement, add them up and then simply add some more for future upgrades.

If there is one component that I will never skimp on is precisely the power supply, after all it is the one component that will "juice" every other component on your system.

I would use this link to estimate
http://extreme.outervision.com/psucalculatorlite.jsp
For the processor estimate by putting in a i5-2500k and put 1.4v (highest volts I would use for processor life, any higher could kill it faster) and then the speed of 4500-4600MHz. This should actually use more wattage than the new more power efficient Ivy Bridge CPU so you should be good (better to be a bit over than under).
