I am able to manually boot into Windows through the BIOS when I turn the PC on but it will never do it automatically.

The Motherboard is the ASUS B250F STRIX GAMING

The m.2 SSD is selected as the boot drive in the BIOS

I have tried it with my other drives disconnected so the m.2 SSD is the only one the mobo can see aswell as changing some of the settings in the BIOS but still no joy.

While I did build the computer myself my knowledge isn't too deep so please be friendly with any responses

use windows disk management see where system and restore folders are. the m2 drive might not post if windows installed some of the files on the hard drive. when you did the install was the hard drive unplugged?? with newer bios set the bios to efi mode. under boot you want windows boot loder os as the first boot device not the drive. windows will boot from the first windows boot file.

Via USB. The Windoes 10 USB stick and the M.2 SSD were the only drives plugged in at the time of installation

This drive was the only drive plugged in during the installation.

I'll give your suggestions a go, thank you!
