How to check the (response time) DoH/DoT in windows 10
For example, let's take cloudflare secure addresses

DNS, IPv4	1.1.1.2 and 1.0.0.2
DNS-over-HTTPS (DoH)	https://security.cloudflare-dns.com/dns-query
DNS-over-TLS (DoT)	tls://security.cloudflare-dns.com

I doubt the encryption overhead will be detectable.

Your best options to get very exact timing on any data communication is to use wireshark and capture the traffic. Even though it is encrypted you can still see the time difference between packets. If you put in a filter for those IP addresses it will make it even easier.
